½ cup sugar
1 egg
½ cup oil
1 teaspoon baking powder
1 scant teaspoon baking soda
½ teaspoon salt
1½ cup flour
1 ripe banana mashed
1 cup un-drained crushed pineapple
Preheat oven to 375
Mix all ingredients together
Spoon into well-greased muffin tins, filling 2/3 full
Bake for 25 minutes or until golden brown
Yield: 12 muffins
